City road crews will test a mixture of cheese brine and salt on some icy streets this winter.
Normally used to make Italian varieties of cheese such as mozzarella and Parmesan, when cheese brine is no longer suitable for soaking cheeses, it typically is discarded as industrial wastewater.
A city report notes that the brine has "a distinctive odor."
