Olympic Chocolate Muffins
By now you have probably heard of the Chocolate Muffins that have gone viral from the Summer Olympics in Paris, France.
If not, here’s everything you need to know…
Swimmer- Henrick Christansen of Norway started doing TikTok videos of some chocolate muffins he enjoyed getting in Olympic Village. A lot of the athletes are making videos referring to Henrick about the muffins.
Sodexo Live!, the company responsible for feeding the 15,000 athletes living in the Paris Olympic Village, told PEOPLE. They’re expecting to serve 100,000 of the chocolate muffins throughout the Olympics and Paralympics. They estimated about 2,000 muffins are being consumed daily.
Well I just knew there had to be a recipe. A radio friend of mine (Kristen who hosts a Morning Show with her husband Nick in Oregan) posted the other day that she made them and shared the recipe. Which led me to this TikTok of Jordan_The_Stallion8.
Here’s the recipe typed out for you:
MAXI MUFFIN CHOCOLATE INTENSE from Coup to Pates
(2024 Paris Olympics Viral Chocolate Muffins)
Muffin Ingredients:
* 3/4 cup of milk
* 1/4 cup of water
* 2 tsp instant coffee
*1/2 cup cocoa powder
* 1/2 cup chocolate chunks
* 1 stick of butter
* 2 cups all purpose flour
* 1 tbsp baking powder
* 1/4 tsp salt
* 1/2 cup packed dark brown sugar
* 1/2 cup granulated sugar
* 1/4 cup vegetable/canola oil
* 2 eggs, room temp
* 1 tsp vanilla extract
* 1/3 cup chocolate chunks
Filling ingredients:
* 1/2 cup heavy cream
* 1/4 cup chocolate chunks
* pinch of salt
Muffin Directions:
1. Preheat oven to 375 degrees. Butter/oil or line a muffin tin.
2. Add milk, water, and coffee into a saucepan and let it simmer.
3. Add cocoa powder and mix. Add 1/2 cup chocolate chunks and butter. Mix.
4. Transfer to a bowl and let cool for a little bit.
5. In a separate bowl, mix flour, baking powder, and salt.
6. To your bowl of chocolate mixture, add brown sugar, granulated sugar, and vegetable/canola oil, eggs, and vanilla. Mix.
7. To the same bowl, add about to a third of your flour mixture and mix.
8. Put the rest of the flour in and mix with a folding spatula. Make sure you don’t over mix it.
9. Add 1/3 cup chocolate chunks and fold it in.
10. Evenly distribute mixture into muffin tin.
11. Sprinkle a few more chocolate chunks on each muffin.
12. Bake at 375 degrees for 24 minutes.
Filling Directions:
1. In a saucepan over medium heat, mix the heavy cream, chocolate chunks, and salt together.
2. Scoop out a little bit of the center of each muffin.
3. Put the filling in a piping bag and use it to fill each muffin.
